While on vacation recently I read this article in Natural Awakenings  that I had to share..

“Commercial popcorn companies often coat their microwave popcorn bags with a chemical called perfluorooctanoic acid (PFOA), which can cause cancer and tumors. According to the U.S. Food and Drug Administration, “PFOA is present in microwave popcorn bag paper at amounts as high as 300 microg kg(-1)” (source). What’s wrong with perfluorooctanoic acid in microwave popcorn bags? PFOA has been linked to a variety of illnesses and diseases in many different experiments. In one study using rats, health researchers concluded that small amounts of PFOA caused cancer and liver tumors (source). Because of research like this, the Environmental Protection Agency (EPA) is looking into PFOA’s “full range of potential human health effects, including carcinogenicity and systemic toxicity” (source).

Microwave popcorn can also cause fatal lung disease. That tasty, fake butter in your microwave popcorn bag contains a chemical called diacetyl. According to health scientists, “diacetyl is a commonly used food flavoring and is the primary constituent of artificial butter flavoring. There is compelling scientific evidence linking occupational exposure to diacetyl to bronchiolitis obliterans, a debilitating and sometimes fatal lung disease” (source).”

I know this article may be a bit scary, but use this information to perfect the art of stove-top popcorn! 

All you need is: medium heat, a thin layer organic peanut oil (I use Spectrum, its delicious), and a layer of organic popcorn kernels (most health food store have them).  continually move the pan over the burner until you hear a few seconds between each pop.  Transfer to your favorite bowl and season it with a bit of garlic salt (my favorite)!!

Last night I wanted to make chili..and usually I buy dried beans and soak them overnight.  I didn’t have time to soak, so I thought I would look into using canned beans.  Canned beans always makes me nervous though, because of the BPA or Bisphenol A found in the lining. 

As detailed in the Thegoodhuman.com website “Bisphenol A, otherwise known as BPA, is a chemical compound primarily used to harden plastic. While the industry that makes BPA says that it is safe, there have been several reports lately about how it could be toxic to the human body because it mimics the sex hormone estradiol when exposed to high temperatures and/or certain dish detergents. ” (and has been linked to breast cancer)

I’m not telling you this to freak you out..Im telling you so you are armed with information..Unfortunately, most canned goods contain BPA (including many organic brands).  So, what I recommend doing is what I did last night at the grocery store, do research.  If you are in a bind and need to buy canned goods look up information on that particular brand.  Last night I found out that Eden Organic canned beans do NOT contain BPA (but their tomatoes do).

In my opinion, dried beans taste ten times better than canned anyways, so next time Im planning ahead so I can soak my beans!  Click on the photo for a great recipe from Whole Foods!
